3 - 4 large carrots
2 tbsp olive oil
1 tbsp cider vinegar (I used red wine vinegar)
1 tsp dijon mustard
1 clove garlic, minced
salt and pepper
2 tbsp flax seeds (or almonds, pumpkin, sesame seeds)
Grate carrots on a box grater. Mix oil, vinegar, mustard and garlic. Season with S&P and sprinkle with seeds for a touch of texture. Simple but delish!
