Tonight, I had some left over broccoli and carrots and made them into one of my favorite soups. I always like having soup on hand so I have something delicious to eat for lunch.

1 tbsp oil
1 cup chopped onion
2 cloves garlic, minced
4 cups broccoli, chopped
2 carrots, chopped
2 1/2 cups chicken stock
1 potato, diced (I didn't add one)
1 can white beans
2 cups milk
1 cup cheese, shredded (opt.)

Cook onion and garlic until softened.
Add remaining 5 ingredients. Cook until soft.
Blend until smooth
Add milk and cheese
Season to taste (sometimes I throw in a little red hot sauce for some wow)
